That’s a hallmark of a hen that’s been out in the pastures and loving the lush, green grasses that the winter and spring rains foster. Access to juicy worms and bugs also contributes to a richly coloured, healthy yolk. As the weather gets hotter, our grasses naturally dry off, and that has a bearing on the yolk colour. It changes to a lighter orange hue, but it’s just as nutritious (and delicious!).
